How To Make Kombucha Tea

  1. Gather Equipment for Making Kombucha Tea

Making kombucha tea at home is easy, and it only requires a few pieces of equipment to get started.

You will need:

  • Glass Jar (4-liter jar)Kombucha Workshop Simply by Ana
  • Plastic or Wooden Stirring Utensil
  • Tight-Weave Cloth
  • Something to secure the cover to the jar (rubber band)

 

  1. Gather Ingredients for Making Kombucha

Below is a list of ingredients needed for making a kombucha.

  • Drinkable Water
  • White Sugar
  • Tea Bags or Loose Tea. Black tea works best but there are options you can use after your kombucha is reliably culturing for a few batches.
  • Starter Tea (the liquid that came with the SCOBY)
  • Kombucha SCOBY
3. Select Ingredient Ratios for Making Different Amounts of Kombucha

KOMBUCHA INGREDIENT RATIOS – (for your first batch make a 2-liter batch, then after that, you can make bigger batches.)

1 liter Batch:

  • 1 tablespoon* loose tea OR 2 tea bags
  • 3 tablespoons* sugar
  • 500ml-750ml water
  • 125ml starter tea

*tablespoon – big spoon – yemek kaşığı

2 liter Batch:

  • 2 tablespoon* loose tea OR 4 tea bags
  • 6 tablespoons sugar
  • 1500ml-1750ml water
  • 250ml starter tea

4 liter Batch:

  • 3 tablespoons* loose tea OR 8 tea bags
  • 12 tablespoons* sugar
  • 3.5 l water
  • 250ml-500ml starter tea
  1. Follow Instructions for Making Kombucha Tea

There are several ways you can make tea for Kombucha brewing. Usually, in Turkey, people have teapot where you can make strong black tea and then dilute it with water in a jar. This is how I do, but everyone finds his/her own system. 🙂

Instructions no.1

  1. Make Black Tea in a teapot. (the amount of water is not important in this step.)
  2. Combine Black Tea, sugar and cold drinkable water in a jar.
  3. Stir and dissolve the sugar.
  4. When the sweet tea in the jar is at the room temperatureadd starter te a and the Kombucha SCOBY.
  5. Cover the jar with a cloth, secure the cloth with a rubber band
  6. Allow the mixture to sit undisturbed at room temperature, out of direct sunlight, for 7-30 days, or to taste. The longer the kombucha ferments, the less sweet and more vinegary it will taste.
  7. Pour kombucha off the top of the jar for consuming. Retain the SCOBY and enough liquid from the bottom of the jar to use as starter tea for the next batch.
  8. The finished kombucha can be flavored and bottled if desired or enjoyed plain.

Instructions no.2

  1. Combine hot water and sugar in a glass jar. Stir until the sugar dissolves. The water should be hot enough to steep the tea but does not have to be boiling.   
  2. Place the tea or tea bags in the sugar water to steep.

NOTE: Using a metal tea ball to contain loose tea for making kombucha is acceptable. The tea ball should be removed before adding the SCOBY and starter tea, so the tea ball will not come into contact with the SCOBY.

  1. Cool the mixture to room temperature. The tea may be left in the liquid as it cools or removed after the first 10-15 minutes. The longer the tea is left in the liquid, the stronger the tea will be. 
  1. Remove the tea bags or completely strain the loose tea leaves from the liquid.
  2. Add starter tea from a previous batch to the liquid. If you do not have starter tea, distilled white vinegar may be substituted.
  3. Add a kombucha SCOBY.
  4. Cover the jar with a tight-weave towel or coffee filter and secure with a rubber band.
  5. Allow the mixture to sit undisturbed at 68-85°F, out of direct sunlight, for 7-30 days, or to taste. The longer the kombucha ferments, the less sweet and more vinegary it will taste.
  6. Pour kombucha off the top of the jar for consuming. Retain the SCOBY and enough liquid from the bottom of the jar to use as starter tea for the next batch.
  7. The finished kombucha can be flavored and bottled if desired or enjoyed plain
